📝品酒筆記: 酒香濃鬱、誘人，甜美的葡萄乾、黑莓果香，揉合黑巧克力、菇菌、黃酒醇香。酒體濃鬱豐滿，帶有成熟的無花果、野生莓果果醬、可可、一些甘草、肉荳蔻和融化的黑巧克力味道，口感柔滑，餘韻悠長。

Borsari Amarone della Valpolicella DOCG是一款擁有悠久傳統風味的葡萄酒，它在口感上展現出豐滿而複雜的個性。這款葡萄酒的精華來自於Corvina、Rondinella和Corvinone葡萄，這些葡萄在收成後，經過3-4個月嚴謹的乾燥過程，使葡萄顆粒中濃縮出獨特的香氣和濃稠的口感，然後將葡萄壓碎，使葡萄汁與葡萄皮混合進行緩慢的發酵，期間持續兩個月，之後再經過24個月的橡木桶陳年，最終展現出壯麗而深邃的特性，不論是作為單飲品嚐，還是與成熟的奶酪或肉類菜餚搭配，都能展現出豐富的層次。

Veneto大區應該是全球愛酒人士熟知的大區之一，不僅是因為一年一度的意大利酒展Vinitaly，她也是意大利釀酒葡萄產量最高的產區，擁有14個DOCG，僅次於Piedmont大區(16個DOCG)，許多知名酒款也都來自這個大區，包括-Prosecco、Amarone、Soave等。

Veneto大區中當中最重要的產區，非Valpolicella莫屬，而Valpolicella產區內的各式酒款中，Amarone絕對是鎮區之寶。今日的Valpolicella產區範圍相當大，但一般來說可以分成三塊，最西方靠近加達湖的Valplicella Classica也是種植釀造歷史較長的地區，同時亦有較多的酒莊聚集。接著是丘陵地勢較明顯的Valpantena地區，它以優雅及陳年實力著稱。最後是靠東延伸的一大片Valpolicella Orientale則是較多果香豐富的酒款。

Valpolicella產區內約種植有31種不同的紅葡萄品種，但其中最重要的三個原生品種為🍇Corvina、Corvinone及Rondinella，它們各有不同的特色，同時更彼此互補相長。藉由不同的釀造技術及過程，以這三個品種為主的混釀，可以被釀成Amarone、Valpolicella Ripasso、Valpolicella乾型紅酒及Recioto di Valpolicella甜紅酒等。其中，現今名聲響亮的Amarone，其實約在三零年代才開始出現。在那之前，使用風乾(appassimento)過後的葡萄所釀造的甜酒款Recioto才是這個產區的主力。當時人們偶然發現，不小心遺忘在角落、經過陳年後的甜酒Recioto，🤔怎麼越來越不甜，但卻有著更迷人的風味? 因此漸漸地越來越受大家歡迎，這才開始有部分的酒莊做出不甜的Recioto secco 或Recioto amaro，一直到五零年代後期，才開始可見以Amarone為名裝瓶出售的紅酒。
